SAD/SEXY
SAD/SEXY: menu inspired by the Colombian Pacific rainforest and other Latin American cultures. its name conveys the concept of nice cooked comfort food and the exciting feeling when tasting certain flavors and textures... a crunchy chicharron, a very spicy sauce, and a runny egg yolk, are life to me... simple pleasures, that drive me crazy. it’s a mood. an exploration of memories from the academy when I was taught by one of the best renowned traditional chefs in Colombia: Maura de Caldas.
TIERRA CALIENTE: CANDIDO X MAKERSMEALS
TIERRA CALIENTE was a 4-course dinner hosted in collaboration with MAKERS MEALS, by food photographer Amber Breitenger at her studio in Jersey City. the dinner concept was about the traditional food you can get on the road when driving for vacations to a warmer land inside Colombia. food that recalls memories like the freshly fried arepas de huevo when heading to Barranquilla, the sweet bite from the starch of a baked pandebono when visiting Boyaca and the steaming hot triphasic tamales from Melgar, to name some examples. for dessert I cooked one of my favorite treats since I was a kid: Islas Flotantes. my parents used to get me this dessert when we all went to pick up my trimonthly bulletin from school. my school was located in the countryside of Bogota, a journey of 1 hour when driving from home. lastly Canelazo was served, a hot concoction of agua'e panela, aguardiente, cloves and cinammon: another treat to purchase when visiting a scenic viewpoint heading to La Calera in Bogota.
